I started using the Oak Infusion Spirals to age my favorite Negroni on my Negroni menu at Marin, which is Aviation Gin, Yellow Chartreuse and Campari. I don't have enough room to keep the aging barrels in my liquor room but the Infusion Spirals make a great alternative without taking up a lot of space. I just drop them into an empty bottle and batch out the Negroni and seal it up and a couple of weeks later it is ready to serve. It gives a nice oak aged finish to the cocktail and I am starting to experiment with a couple other cocktails on my menu.
